




Baofeng liquor is brewed using four types of raw grains, with domestic high-quality sorghum as the primary raw grain. Three types of grains, wheat, barley, and peas, are used to make the fermentation starter. Compared to other traditional fen-flavor liquors, Baofeng liquor's fermentation starter incorporates high-starch wheat, which increases the types and content of heterocyclic compounds in the liquor, resulting in a thicker body and a fuller taste. The four grains blend together, complementing each other's strengths, highlighting the aroma of grains and producing a mellow, sweet, and refreshing liquor.
Based on the traditional three-color distiller's yeast of "clear residue yeast, red heart yeast, and post-fire yeast" for fragrant liquor, Baofeng liquor has innovatively developed its own high-temperature yeast (pure wheat yeast), forming a unique process of "four yeast co-fermentation" that gives Baofeng liquor a longer aroma and richer flavor.
Before traditional fen-flavor fermentation in earthenware vats, Baofeng liquor undergoes 24-hour aerobic pile fermentation on the ground with the addition of Daqu (a traditional Chinese fermentation starter), which fully attracts environmental microorganisms and enhances aroma through microbial cultivation. Subsequently, it enters the earthenware vats for anaerobic fermentation. This additional pile fermentation significantly enhances the sweetness and fullness of Baofeng liquor.
Steaming twice is one of the most traditional and typical craft characteristics of fen-flavor Baofeng liquor. Steaming raw materials and auxiliary materials, distilling twice, and selecting liquor based on its appearance ensure that Baofeng liquor has a pure and fragrant flavor, maintaining its clarity throughout.
Baofeng raw wine needs to be aged in three containers: the ancient basket wine sea, a specially made pottery jar, and a stainless steel tank. Among them, the ancient basket wine sea, as a scarce storage container, gives Baofeng wine a unique style. During the storage process, various aroma components of the wine sea blend together, and the wine molecules and water molecules combine for a long time, ensuring that Baofeng wine is mellow and aged, with a long aftertaste and quick awakening.
